Easy Chicken Lo Mein - quick and easy homemade chicken, vegetables and noodles dish with teriyaki sauce. Much better than take-out.

This dish is so quick and easy, just like my Teriyaki Chicken Stir Fry or the Shrimp Fried Rice.

Why This Recipe Works

My favorite simple teriyaki sauce has made an appearance in other Asian takeout fakeout dishes I shared on my blog. It is the star of the popular Quick Teriyaki Chicken. It's so simple, I often make it the day before along with cooked chicken and when it's dinner time, everything just gets mixed with veggies in a pan and served. Talk about quick and easy!

If you are looking for a new dish to add to your weekly rotation, this Easy Chicken Lo Mein is perfect. Quick, easy and packed with flavor. Just like my Easy Chicken Yakisoba. So much flavor!

We are all about quick and simple dinners in our house, especially during summer when there is just so much to do and see. I don't want to stand by the stove. Just a few fresh ingredients and I can have a flavor-packed dish on the table under 20 minutes and know that there will be no leftovers. Although I have to say, the leftovers from this Lo Mein are crazy good too! Make it for dinner tonight and keep some for lunch tomorrow. Done and done!

Ingredients:

  • lo mein noodles or spaghetti noodles
  • my Homemade Teriyaki Sauce
  • chicken (breast or thighs)
  • fresh veggies

Instructions:

  • In a small mixing bowl, whisk together brown sugar, soy sauce, ginger, garlic, sesame seeds and cornstarch. Set aside.
  • In a large skillet, heat up olive oil. Add chicken and season with salt and pepper. Cook until no longer pink. Add carrots, peppers and mushrooms. Cook until peppers are tender. Add spinach and cook, stirring, until spinach is wilted. Add cooked noodles to the skillet. Stir. Add sauce and cook, stirring often, until everything is heated up.
  • Serve garnished with chopped green onions or toasted sesame seeds.

Variations:

  • If you don't have fresh ginger on hand, feel free to use ground ginger.
  • Of all the vegetables you can use in this dish, I would say definitely go with mushrooms and peppers. They add serious flavor.
  • If you are not a fan of spinach (or know that your family won't like it), skip it and maybe use snow peas.
  • It is recommended to use lo mein egg noodles in this dish but if you can't find them - simply use spaghetti noodles. They will work just fine!
  • You can use any meat you like (beef, pork, chicken or shrimp) or keep it simple with veggies. Use any blend you like: carrots, cabbage, snow peas, edamame beans, peppers, mushrooms, spinach.
  • This Chicken Lo Mein is so versatile, you can make a new version every week! Make it when the craving for Chinese take-out hits as you may already have the ingredients on hand. Quick and simple!

Ingredients

  • 6 oz lo mein noodles or spaghetti noodles , cooked according to package directions
  • 1.5 lbs boneless skinless chicken breast or thighs , cut into bite size pieces
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil
  • 1 cup sliced white mushrooms
  • 1 medium carrot , cut into thin sticks
  • 1 small red bell pepper , chop or julienne
  • 2 cups fresh spinach

for the sauce:

  • ¼ cup brown sugar ( or honey)
  • ½ cup low-sodium soy sauce
  • 2 teaspoon apple cider vinegar
  • ½ teaspoon grated fresh ginger
  • 1.5 teaspoon minced garlic
  • 1 teaspoon toasted sesame seeds , optional
  • 1 teaspoon sesame oil , optional
  • 1 tablespoon cornstarch

Instructions
