How to Make Mississippi Beef and Cabbage in an Electric Pressure Cooker

My family loves them some Mississippi-style recipes, so when a reader asked for a low carb meal they could make in their Ninja Foodi using stew meat, we got to thinking.

Mikey asked me to figure out how to make a Mississippi Beef and Cabbage using the electric pressure cooker, given we knew the beef would take longer to cook than the cabbage. So I got in the kitchen and tested it out and a new favorite recipe was born!

Low Carb Options for Ninja Foodi Mississippi Beef and Cabbage

While not everyone is comfortable using pre-made packets in their low carb diet, we enjoy this dish in our low carb menu from time to time by always checking nutritional information on ranch packets (sometimes opting for a dill ranch packet or chive and onion packet). Some packets reduce the carb counts for the entire recipe by 16 carbs. Additionally we make sure to useAuJus Gravy packetsinstead of higher carb gravy packets– this typically makes the carb count at least 1/4 of what it would be.

Notes on This Recipe

  • Cut cabbage pieces slightly larger than bite-sized to help them withstand the pressure.
  • We used beef broth but you can use other broths in a pinch.
  • If you are eating low carb, check carb counts on the mixes. They differ greatly by specific packet and change frequently.
  • We love using sliced pepperoncini in this dish and the pepperoncini juice. You can use whole ones if you prefer to remove them and omit the juice if you are afraid it will make the dish too spicy.
  • We’ve tested this recipe in a 6.5 quart Ninja Foodi. When pressure cooking with larger pressure cookers, you may need to add 1/2 cup to 1 cup more liquid to reach pressure. Make sure not to overfill smaller pressure cookers past their max lines.

Instructions

  • Place all ingredients except cabbage in a 6 to 6.5 electric pressure cooker pot and place under high pressure for 15 minute

  • Quick release and add cabbage.

  • Place under high pressure for 8 more minutes.

  • Quick release and serve with a slotted spoon as a main dish or in a bowl as a soup.
